BBQ Masterclass With Under The Hood

On a cracking Saturday morning in July, we welcomed some fellow BBQ enthusiasts for a day of BBQ, banter and eating. By now, you’ve probably come across Dave and Michelle King, AKA Under The Hood BBQ. But if not, they’re a Nelson based hubby and wife team who are not only King by name, but king by nature when it comes to BBQing. They offer BBQ classes, catering and have some hunger induced social media content. Dave and Michelle made the trip over the hill to Blenheim to share all their tips and tricks to cooking up some epic BBQ meals with us – here’s how it went.

We kicked things off with a meet and greet and a few BBQ basics. Then after BBQ 101 was completed, we started the day by putting on some pork ribs to cook over the course of the day – you can’t beat some low and slow ribs. More on those later.

The first cook of the day was some chicken wings on the Weber Kettle. Attendees paired up and created their own rub creation out of a variety of herbs and spices, coated the wings and waited for the magic to happen. Indirect over the coals, these wings were the perfect way to kick of a big day of BBQing (and eating!)

Next up was arguably the most impressive cut of meat of the day, big ol’ tomahawk steaks from our friends at Meaters Of Marlborough. Dave took everyone through how to reverse sear these bad boys before attendees got hands on and cooked up their own.

Remember those ribs we mentioned before? Here they are being glazed with mustard, honey and brown sugar and wrapped for their final stint in the Weber Smokefire. Once the ribs had been devoured, the best really was saved til last – brisket and pulled pork, superbly cooked by Dave and Michelle.
